La Badessa's single variety organic extra virgin olive oil , comes exclusively from the cold-pressing of selected olives of the Carolea variety, produced on the Barranca farm. Olives are hand picked in the period of low maturity so as to preserve a higher quality of aromas and natural antioxidants, then they are pressed in our mill within eight hours; the very short time period between picking and pressing allows the olives to preserve their freshness and integrity.
The result is a harmonious and elegant oil, green in colour with golden-yellow accents and a low level of acidity, from a yield of just-picked green olives, with the intense flavours of haromatic herbs, almonds, tomato and moderate tones of bitter and spicy. This is an organic oil that married flavours when used in cooking or other uses, enhancing vegetables, legumes, fish and meats, and anything else that requires that Mediterranean touch.

The organic extra virgin olive oil "La Badessa" is sold in elegant bottles of 100ml, 250ml, 500ml and 750ml, as well as in 3 and 5 litre tin containers and can be purchased from the company, which makes deliveries to specialized stores as well as homes.

Thanks to its quality, our organic extra virgin olive oil has been repeatedly reviewed in the "Guida agli Extravergini" published by Slow Food.
